Homemade Caramel Vanilla Coffee Syrup

Homemade Caramel Vanilla Syrup

I confess, I love flavored coffee, and Caramel is number one. I like it iced, frozen, and hot. It all depends on the weather really. Nothings better than a warm fresh cup of coffee while watching the morning dawn. It’s my time for spiritual contemplation.

Unfortunately my passion for flavored coffee came with a big price. Store bought bottled syrup was costing me a fortune. It was time to bring things into the homemade arena.

This recipe is my first venture into making coffee syrup. It’s rich caramel and smooth vanilla flavor hit a home run for me. I hope it dose for you as well! Enjoy,


Step One


Place sugar, brown sugar, and water into a medium sauce pan.

Step Two


Over medium heat melt down sugars. Stirring occasionally.

Step Three


Bring to a boil and remove from heat. At this time stir in the vanilla extract. Allow the syrup to cool down to room temperature before bottling.



  • 1 1/2 cups sugar
  • 1/3 cups brown sugar + 2 tbsp
  • 1 1/2 tsp vanilla extract
  • 2 cups water

  1. It looks delicious Jason. I prefer my coffee black but I think I might need to try this. I wonder how it would be in ice cream

    1. I think it would be excellent on ice cream. You may need to let it simmer a little longer to help thicken the syrup.

        1. Hi Wendy! Thanks for stopping by MessyFoodie. I’m not a food health expert, but I haven’t had any problems personally keeping a air tight jar refrigerated for 8-10 days. I usually go through them quickly so I haven’t had a reason to store them any longer.
