Sweet, earthy tomatoes and spicy Italian sausage, smoothly balanced with smoky Gruyere cheese. Smothered under a golden cap of oven roasted Monterey Jack Cheese. My wife and I recently purchased a set of cast iron skillets and we’ve been dying to cook with them! Until now, we never seemed to find the right recipe to make our skillet learning debut. I don’t know, I’m sure I was putting to much thought into cooking with new skillets. But that’s how my creative journeys always seem to flow, I think about things deeply until a spark ignites my soul.
That’s exactly what happened when I stumbled upon this perfect skillet recipe. I was minding my own business while waiting in line at the grocery store. My eyes browsing the magazine covers. You know those magazines that are usually full of trash articles about alien invaders. When, out of the corner of my eye, an image caught my attention. A cast iron skillet baked tomato pie. My creative imagination was sparked!
These Cheddar & jalapeño easy drop biscuits are fluffy and moist. They have a beautiful sharp cheddar and spicy jalapeño flavor that’s rounded off by a smooth buttery undertone.
I’m a biscuit lover, no getting around it. They are great with butter, served with warm gravy, or eaten as a simple snack. You name it and I can find a reason to indulge in the biscuit. But there’s a special place in my heart for the greatness of cheddar jalapeño biscuits.
I first tried a cheddar jalapeño biscuit while we were having a family day out. We treated ourselves to a quick breakfast kickoff at What-a-Burger. Oh man, I’m so happy I decided to branch out from the plain sausage biscuit. Even though it was fast food, I was in cheddar and Jalapeño heaven! I knew right then I needed to work out my own homemade recipe. So here’s what I came up with, I hope you enjoy them as much as I have.

Turkey stuffing/dressing tastes so awesome! So why is it I only think of it during the thanksgiving holiday? Year after year it happens, thanksgiving rolls around and an idea light bulb suddenly lights up in my mind. Oh! Stuffing sounds good! The thought always feels genius to me. Does this happen to anyone else, or is it just me?

I enjoy the cool fall weather. The trees begin changing as they prepare for the coming winter. Their vibrant colors paint the landscape and seem to signal that the holiday season has begun. My cravings for coffee seem to shift with the color of the trees. I begin longing for warm cups of holiday coffee rather than the iced summer drinks.
